Marbled Rye Bread

ImageHere’s the bread recipe that I used for my Pastrami Project! (That Pastrami was awesome…. I may have to make more soon!) I used a Recipe from Red Star Yeast and made a couple of modifications to it.

The concept here is to make a light  rye bread recipe and a dark rye recipe  then divide the dough in half to make 2 multi colored loaves. This can be a fun art project for your kids and hopefully get them interested in cooking!

Ingredients for Light Rye

  • 1 1/4 cups warm water
  • 2 teaspoons Red Star Yeast
  • 2 cups bread flour
  • 1 1/3 cups Rye flour
  • 2 Tablespoons sugar
  • 2 teaspoons Caraway seeds
  • 1 1/2 teaspoons salt
  • 1 1/2 Tablespoons vegetable oil

 Ingredients for Dark Rye

  • 1 1/4 cups warm water
  • 2 teaspoons Red Star Yeast
  • 1 cup bread flour
  • 2 1/3 cup Rye Flour
  • 2 Tablespoons sugar
  • 2 Tablespoons Hershey’s Cocoa
  • 2 Tablespoons Molasses
  • 1 1/2 Tablespoons Vegetable Oil
  • 2 teaspoons Caraway Seeds
  • 1 1/2 teaspoon salt

 For each loaf, proof yeast for 5 minutes in the warm water. Add all other ingredients and mix thoroughly. I use a stand mixer (Kitchen Aid) . It was a Christmas present for my wife, but I end up using it way more than she does!

Place dough in separate bowls that are lightly oiled. Cover and let them rise in a warm spot until they are doubled in size.

Take each ball of dough and cut each into four equal parts. Take a dark portion and flatten into a 10″ x 10″ square and set aside. Do the same now with a light portion and stack on top of the dark. Repeat until you have a total of 4 layers. Press layers together then roll tightly as if you were making cinnamon rolls. Shape dough to fit in a lightly oiled loaf pan and then assemble other loaf. Have fun… try something different – maybe a checkerboard pattern?  or just knead dough into a fun pattern?

 Cover loaves in a warm spot until dough has doubled in size. Bake in 375f oven for 30-35 minutes. Allow to cool (at least somewhat… It’s hard to wait) before slicing!
