Almond Crust Cheesecake With Blackberry Topping

ImageIt’s kind of tradition here to have cheesecake at Easter…(no ham dinner though – I made tamales!)

This has to be my favorite cheesecake recipe although I usually use boysenberries for the topping. It is very moist and creamy with a thicker, nutty crust.It is also rich –  I suppose it’s a good thing that I only make this a couple of times a year. The recipe is very easy, but I will say that I have had the best luck using my 9″ springform pan. If you use a different size pan, you may have to adjust your cooking time slightly.

Preheat Oven to 325f

Crust Ingredients

  • 1 sleeve Graham Crackers – crushed
  • 1/2 cup Almonds – chopped
  • 1/2 cup sugar
  • 1/4 cup butter – melted

Filling Ingredients

  • 1 lb cream cheese (2 – 8 oz boxes)
  • 12 oz Sour Cream
  • 2 Eggs
  • 1/2 cup Sugar
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Almond Extract

Combine all ingredients in blender and mix until smooth. Pour filling into springform pan and bake at 325f for 45 minutes. Set cheesecake under broiler (or use mini-torch) to brown the top slightly.

Cool on rack, then cover and refrigerate for 4 or more hours. Overnight is the best.

Topping Ingredients

  • 1 lb Blackberries (or Boysenberries) Frozen or Fresh…
  • 1/2 cup sugar
  • 1 teaspoon Vanilla Extract (optional)
  • 1 Tablespoon Corn Starch

Combine in saucepan. Cook with Medium heat until berries simmer and then thicken slightly. Cool and serve as topping.Image
